Ingredients
- 5.5 pounds red new potatoes
- 8 cloves minced garlic
- 1.5 cups best quality olive oil
- 1-2 small bunches fresh mint, stems removed, leaves finely chopped
- 2 tablespoons coarse kosher salt
- Fresh ground pepper to taste
Method
- Preheat oven to 350°F.
- Scrub potatoes and prick each one about six times with fork.
- Place in shallow roasting pan and roast for two hours.
- Once cooked, cut each potato in half. Toss potatoes with garlic, oil, mint, salt and pepper in large bowl. Let stand 30 minutes before serving.
